Gazpacho Recipe
This recipe is a gift from my friend Silvia, who lived in Barcelona.
6 meduium size red tomatoes
1 carrot
½ green pepper
½ cucumber, peeled
½ small onion
1 garlic clove
¼ cup extra virgin olive oil
2 tablespoons apple vinegar
Run the dull part of the knife over the whole tomato and pill the skin off. Peel the skin off of the carrot and the cucumber.
