Cook time: 25 minutes
1 bunch nettle
1 cup Basmati rice
2 cups water
1 tbs butter
half medium-size onion, diced
1 tbs olive oil
4 tbs pomegranate seeds
Put protective gloves to trim the nettle. Keep only the leaves and discard the stems.
Heat the olive oil over medium heat. Add diced onions and saute until soft, about 4 minutes.
Add the nettle leaves and mix well with the onions. Let it cook for 5 more minutes. If it’s too dry add 3 tbs water or vegetable broth.
Brings a pot with the 2 cups of water to a boil. Lower the heat to simmer. Add a pinch of salt and 1 tbs butter and 1 cup Basmati rice. Cover the pot with a lid and cook for 10 minutes or until water evaporates.
Add the cooked nettle to the pot of rice, stir well and leave covered for 5 minutes.
Place it in a big serving plate and sprinkle the pomegranate seeds on top right before serving.
