Tarator – Cold Cucumber-Yogurt Soup

My Brazilian friend Deborah couldn’t understand why would anyone mix yogurt with water until she tried tarator. In Bulgaria tarator marks the start of summer.

6 kirby cucumbers
1 tablespoon fresh dill
2 tablespoons crushed walnuts
½ tablespoon sunflower oil
Salt to state
12oz yogurt (2 single size Fage container TOTAL 0% Greek Yogurt)
1 cup cold water

Peel and dice the cucumbers into small pieces.

In medium size bowl mix the diced cucumbers with finely cut fresh dill. Add the salt and sunflower oil and mix well…

  1. There is a vegan version of Tarator Salad with water instead of yoghurt traditionally eaten in Serbia in hot summer days (after mowing grass by scythe).
    The ingredients are: cucumbers, garlic and some cold water and some salt. Nothing is so refreshing!
