Rustic Herb Potatoes
Provençal or urban – this is the most accommodating side for everyday meals.
Prep time: 45 minutes
2 lbs Yukon gold potatoes
1 bay leaf
½-teaspoon freshly ground black peppercorns
4 sprigs fresh thyme
2 sprigs fresh rosemary
12 medium garlic cloves, not peeled
4 tablespoons olive oil
½ cup beer
Salt and freshly ground black pepper to taste
Cut the potatoes into irregular big chunks. Place them in a baking dish and mix well with herbs, black pepper, garlic cloves, olive oil and salt. Pour the beer evenly over and bake in an oven for 25 min at 350F until soft inside and golden brown crisp on the outside.

This looks delicious. I guess stock would work instead of beer, which we rarely have around.
