Burek – Roasted Red Peppers Stuffed with Feta Cheese
The word “Burek” comes from Turkey and it means a stuffed pastry with cheese. The Bulgarian version is lighter and comes wrapped in delicious fire-roasted red pepper.
4 bell red peppers
2 eggs
0.5 lbs Bulgarian feta cheese
1 tablespoon fresh parsley, minced
½ flour
1 egg
Wrap individually each red pepper with heavy-duty aluminum foil and roast on open fire 10-15 minutes. Every 3 minutes turn the pepper to roast evenly all sides. Once cooked place them in a container with a lid on and let them cool off. When they are cool enough to handle peel the skin off, and gently discard the seeds from inside flesh without breaking the their shape.
