Omelette Provencal Style

It’s an easy and quick breakfast recipe. The secret of the fluffy look is the way eggs mixture is gently folded while eggs are still cooking.

2 servings

4 eggs, room temperature
½ cup finely grated Comte cheese
¼ cup finely chopped scallions
2 tablespoons diced shallots
1 tablespoon mix of fresh herbs – parsley, thyme oregano and sage, finely diced
salt to taste
olive oil to cook
for garnish freshly ground black pepper and finely diced parsley
